Yet not all green teas are created equal — and understanding the difference between Sencha and Gyokuro reveals just how diverse, elegant, and healing this leaf can be.

Sencha: Bright, Everyday Energy
Origin: Japan and China
Flavour: Fresh, grassy, floral, lightly astringent
Aroma: Sweet-green and cleansing, with notes of the sea and meadow
Look: Long, flat emerald leaves that brew into a golden-green liquor
Sencha is Japan’s most loved green tea — the everyday hero found in homes and teahouses across the country. The leaves are grown under full sun, harvested, and then quickly steamed to preserve their colour, nutrients, and crisp vegetal character.
Chinese Sencha, on the other hand, is pan-fired instead of steamed, giving it a softer, more floral and toasty profile, whereas Japanese Sencha leans towards brighter, umami-rich flavours with a hint of gentle sweetness.
Health-wise, Sencha is rich in antioxidants like catechins (EGCG) that support metabolism, detoxification, and cellular protection. Its moderate caffeine content provides energy without overwhelming the nervous system — perfect for those wanting to stay sharp yet centred throughout the day.
Brew tip: Use 70–80°C water and steep for just 1–2 minutes to preserve its delicate compounds and prevent bitterness.

Gyokuro: The Shaded Jewel of Japan
Origin: Uji, Japan
Flavour: Deep umami, sweet, velvety smooth
Aroma: Oceanic, brothy, and mellow with a lingering sweetness
Look: Fine, needle-like jade leaves that brew a vibrant, translucent green
Gyokuro is often called the “champagne of green teas”, and for good reason. In the last 20–30 days before harvest, the tea bushes are carefully shaded from sunlight, which boosts their L-theanine content and reduces bitterness.
L-theanine is the amino acid responsible for that serene, alert calmness we feel after sipping high-quality green tea. It works synergistically with caffeine to smooth energy release, improve focus, and eliminate the crash we often experience with coffee or stronger teas.
This slow, sustained energy is why monks have traditionally drunk Gyokuro during long meditation sessions — to remain awake, peaceful, and inwardly still.
Brew tip: Gyokuro prefers cooler water (around 60°C) and a longer infusion (2–3 minutes). The result is a rich, buttery cup bursting with savoury umami and an almost ocean-like sweetness.
